Hi, guys! It's been about a year since I posted a recipe; It's been a tough time but we're seeing it through. It's spring-like here (some days, at least) and that always gets me thinking about picnics, days at the beach, and road trips.

It has been in the 90's all week here and I don't know about you but I'll do anything I can not to heat up the kitchen any more than I have to and this Tuna Salad is the perfect way to have quick, cold sandwiches for lunch or dinner. Also, they're perfect for picnics!

I worked on this recipe for years and finally found the perfect mix of tart and sweet, creamy and crunchy that my family absolutely loves. This tuna salad is made with hard-boiled eggs, diced sweet pickles (trust me), mayo, and lots of lemon juice, but there's one secret ingredient that takes it from bland to flavorful in a snap.

I'm a sucker for a quick meal, but that doesn't mean I want to sacrifice taste. This Sweet & Savory Roasted Chicken Salad is made from a deli roasted chicken, so if you're short on time, you can still whip up a delicious meal without waiting hours or heating up your kitchen!

Perfect for a quick dinner, to take along to a picnic, or serve at a cookout, this chicken salad has a sweet, nutty taste that everyone will love. Serve over a salad, in sandwiches, or on the side, and see why this will always be my go-to chicken salad recipe!

Note: If you've never handled a whole chicken, I'll walk you through taking it apart. Also, this recipe can easily be doubled.
