Our family has a Family Game Night every Friday (followed by Family Movie Night on Saturdays), and I always make a pizza on Fridays. I'd be lying if I said it was always homemade, but those are always the family's favorites.


One of my family's favorite pizzas is my Super Supreme. This is a super-loaded, clean out the fridge, piled-high, mostly-veggie pizza. Secret: I hide most of the veggies under the cheese and the kids still don't know what's up! I use pepperoni but you can just leave it off for a meatless, but totally filling, dinner option!

Super Supreme Pizza

Ingredients:
  • 1 large store-bought crust or 1/2 of this Homemede Pizza Dough recipe
  • 2 Tbsp. Extra Virgin Olive Oil
  • 2 Tsp. minced Garlic
  • 3 Tbsp. Pizza Sauce (or mix 1 can tomato paste with 1 can of tomato sauce and season to taste with Italian Seasoning and Garlic. You can freeze the remainder to use later.)
  • 1 cup of fresh Spinach, washed, dried, and torn
  • 1/2 of a Red Onion, quartered and sliced thin
  • 1 green Bell Pepper, sliced thin
  • 1 Tomato, seeds removed and sliced thin
  • 14 slices Pepperoni
  • 1 small can of sliced Black Olives
  • 1 can of Artichoke Hearts, quartered, in brine
  • 1-1/2 cups Mozzarella cheese
  • 1 Tbsp. Italian Seasoning
  • 1/4 cup Parmesan, divided

Directions:

1. Preheat oven to 450 degrees if using homemade pizza dough. If using a pre-made crust, follow the manufacturer's directions.
2. Line your pizza pan with parchment paper and drizzle with olive oil.
3. Stretch your dough out over your pan and roll the edges in to form the crust.
4. Drizzle the 2 Tablespoons of Extra Virgin Olive Oil over the dough and brush over the crust.
5. Add the garlic to the pizza sauce in the middle of the dough and spread with the back of a spoon.

6. Layer on spinach, bell pepper, onions, & tomato slices. At this point I add about a cup of my cheese to hide the veggies ;)

7. Layer pepperoni, olives, & artichokes over cheese.
8. I have to make the crust tasty or the youngest won't eat it, so sprinkle your Italian seasoning over the whole shebang, concentrating about half on the crust.
9. Then sprinkle half of your Parmesan over the crust; sprinkle the rest over your pizza.

10. Sprinkle on the rest of your Mozzarella.
11. Bake for 20 minutes or until crust is medium brown and cheese is bubbly and just starting to brown.
