Ice Cream cakes are a summer staple, but you don't have to wait for the next birthday to roll around to enjoy this delicious treat, nor do you have to compromise on the flavors. You can make a delicious, rich, creamy, fluffy ice cream cake for 1 whenever you like!


We love ice cream cakes, but usually only splurge on birthdays because they're so expensive. Then you have to cross your fingers that the kids don't pick something cotton candy flavored.


These individual ice cream cakes are super-easy to make and are anything but rainbow bubble gum--unless that's your thing. ;)


These are seriously delicious any-thing-mommy-wants flavored. Do you have a mug, some water and about a minute? Make a Chocolate Caramel or Mint Chocolate Chip ice cream cake. No, you don't have to share!


Death by Chocolate? Go ahead. Sprinkles? Why not. Caramel sauce? Do it to it. These are SO quick and easy because I'm using the brand-new Perfect Size for 1 from Duncan Hines.

Warm, fluffy cake, ready in about a minute? Yes, please. You also don't need to make sure you have eggs or oil in the house. Just add water or substitute milk, cream, orange juice, coffee, liquor, or soda. You can add in whatever you want: chocolate chips, nuts, fruits. It's fail-proof!


Totally customizable cake, fast. Add any toppings you like for a warm delicious treat just for you. Guess what I added?


Dum, dum, DUM! I feel like I need an award for this. A personal ice cream cake? Wait, I guess that is my reward. I'll take it.


It's super-easy to make and I'm using milk in my Chocolate Lover’s Cake. Grab an 8 oz. microwave-safe mug and a few tablespoons of your fave liquid and you're good to go.


Let your ice cream sit out to soften.


Now for the cake. Just add a packet + your liquid and mix right in the mug. No bowls or pans to clean! See those lumps? Chocolate Chips. *drool*


Look how fluffy it is! 


If you can keep from digging in to this warm treat, stick it in the freezer for a few minutes to cool it off fast (don't cover the cup!)


Add a scoop (or two) of your favorite ice cream to the top and level it out.


Stick it back in the freezer to firm up a bit.


Then top with creamy whipped cream (or squeeze on some icing if that's your thing.)


Sprinkles? Don't mind if I do.
