Before the cool weather hit, I wanted to share this delicious little stuffed pocket recipe with you. Crispy on the outside and melty on the inside, these Hawaiian Ham & Cheese Pockets are stuffed with salty ham, sweet pineapple and bell peppers, and ooey, gooey cheese! They'll hit all of your comfort food cravings and are the perfect appetizer for a get-together!


Mmmmmmm, cheese, one of my absolute favorite foods. Bonus points if it comes out melted and creamy. Extra bonus points if it's stuffed inside a crispy shell! These pockets hit all of the high points with their textures and sweet/savory taste.



Hawaiian Ham & Cheese Pockets

Makes: 8 pockets

Ingredients:

  • 4 slices of Ham, cut into strips
  • Pineapple tidbits, drained
  • 1 Bell pepper, cut into strips
  • 8 slices of Mozzarella cheese, cut in half
  • 16 pieces of Lumpia Wrapper (Spring Rolls wrapper)
  • Oil for Frying
  • Water to soften wrappers


Directions:
  1. Place a wrapper on a plate and soften it with fingertips dipped in water.
  2. Arrange the strip of ham on top of the wrapper and place a slice of the cheese on top of the ham.

  3. Pile on a few pieces of pineapple and bell pepper and top with another piece of cheese.

  4. Wrap the ends of the ham around the cheese and pineapple/peppers and fold the wrapper on all sides forming a pocket or square and seal with water.

  5. Flip the package over onto another prepared wrapper. Fold that one and seal. Your package will now be wrapped in two spring roll wrappers.

  6. Once oil is hot, deep fry pockets for about 4 to 5 minutes or until wrapper turns golden in color.

  7. Serve immediately.
