With the New Year coming, it's time for me to start thinking about eating better. Gone are the many holiday meals, the rich dishes, the dense cakes, cookies for miles, and the chocolate. Oh, the chocolate. If you need to get back on track too, I have the perfect recipe for you. This is one of my favorite lunches and it's so delicious, you won't even miss that fruitcake. These Grilled Chicken & Avocado Melts are made from better-for-you (but incredibly flavorful) ingredients, toasted, piled up, and melted together. Just add a piece of fruit for a totally balanced meal!



When it comes to eating a balanced diet, it doesn't have to be bland. The more flavor, the more likely you are to stay on the right track. It's just a matter of choosing the ingredients your body needs to feel full and produce the energy you need to keep going all day long. If it tastes good too, you won't feel like you're missing anything, and this melt is a delicious way to go.


Crunchy on the bottom, smeared with a seasoned layer of chunky, creamy avocado, piled with warm, tender grilled chicken breast strips, and topped with melted mozzarella. Dreamy.


A few tricks for eating better are to always choose a multigrain bread over a processed white bread, choose a healthy fat like avocado over mayo, and always include a protein to help you feel fuller, longer. Check, check, and check.

Grilled Chicken & Avocado Melt

Serves: 1 (or a crowd!)
Prep time: 5 minutes
Cook time: 10 minutes

Ingredients:
  • 1 slice of Multigrain bread
  • 1/2 avocado
  • sea salt, to taste
  • pepper, to taste
  • 3 Tyson® Grilled & Ready Chicken Breast Strips, warmed according to package directions
  • 1 Tbsp. low-fat mozzarella cheese, shredded


Directions:

1. First, toast your bread to your preference. If you're doing multiple servings at once, line a baking sheet with parchment paper and toast your bread in a pre-heated 350° F oven for 5-7 minutes, turning halfway through.

2. Dice your avocado half and place in a bowl. If you're making more than one melt, use 1/2 avocado for each piece of toast.


3. Sprinkle sea salt and pepper onto the diced avocado, stir and mash lightly with a fork. Taste and season to your liking.

4. Spoon the avocado mixture onto the toast and spread to the edges.

 

5. Top each toast with 3 grilled chicken breast strips.

6. Sprinkle each with about a tablespoon of shredded mozzarella cheese.

 

7. Broil for approximately 3 minutes, or until the cheese is melted and bubbling. Enjoy!

I know they look amazing, but what I need to convey to you is how good they taste. You guys. So good. I could eat these morning, noon, and night and not get tired of them.


They're a cinch to make. You can have all the ingredients ready to pile up while you're toasting the bread, then just a quick broil to melt the cheese. Balanced + quick + delicious = perfect.


Making these for the whole family takes about 2 minutes longer. If they're fans of chicken and avocado like mine are, you'll have everyone eating better right along with you. Shhh, I won't tell.
