Grilled Chicken & Avocado Melts

With the New Year coming, it's time for me to start thinking about eating better. Gone are the many holiday meals, the rich dishes, the dense cakes, cookies for miles, and the chocolate. Oh, the chocolate. If you need to get back on track too, I have the perfect recipe for you. This is one of my favorite lunches and it's so delicious, you won't even miss that fruitcake. These Grilled Chicken & Avocado Melts are made from better-for-you (but incredibly flavorful) ingredients, toasted, piled up, and melted together. Just add a piece of fruit for a totally balanced meal!
It's easy-peasy to use them! You keep them in the freezer and just pull out the amount you want to use in your recipe. Thaw and warm them in a flash and you have perfectly cooked chicken breast strips to top salads, for casseroles, soups, or anything else you might want grilled chicken with.
- 1 slice of Multigrain bread
- 1/2 avocado
- sea salt, to taste
- pepper, to taste
- 3 Tyson® Grilled & Ready Chicken Breast Strips, warmed according to package directions
- 1 Tbsp. low-fat mozzarella cheese, shredded
4. Spoon the avocado mixture onto the toast and spread to the edges.

- 1 slice of Multigrain bread
- 1/2 avocado
- sea salt, to taste
- pepper, to taste
- 3 Tyson® Grilled & Ready Chicken Breast Strips, warmed according to package directions
- 1 Tbsp. low-fat mozzarella cheese, shredded

How to cook Grilled Chicken & Avocado Melt
- First, toast your bread to your preference. If you're doing multiple servings at once, line a baking sheet with parchment paper and toast your bread in a pre-heated 350° F oven for 5-7 minutes, turning halfway through.
- Dice your avocado half and place in a bowl. If you're making more than one melt, use 1/2 avocado for each piece of toast.
- Sprinkle sea salt and pepper onto the diced avocado, stir and mash lightly with a fork. Taste and season to your liking.
- Spoon the avocado mixture onto the toast and spread to the edges.
- Top each toast with 3 grilled chicken breast strips.
- Sprinkle each with about a tablespoon of shredded mozzarella cheese.
- Broil for approximately 3 minutes, or until the cheese is melted and bubbling. Enjoy!
