Back-to-school time is here and that means back to quick and easy dinners in our house. I love making meals that look like they took hours, like this Chicken Parmesan Lasagne, that actually only took about 10 minutes to throw together. I grabbed all of my ingredients and got busy making this super-stuffed lasagne filled with layers of creamy herbed ricotta and a center layer of Parmesan chicken. It's all topped with a red sauce and more parm, then slices of fresh mozzarella and basil. It's an incredibly kid-friendly, easy weeknight meal.

There are some shortcuts worth taking. If you can make a delicious dinner in less time, that means more time with the family. Totally worth it.

Lasagne is a dish that is notorious for taking hours to make, which is why it's not one of my favorites to make during the school year, even though the family loves it. Prepping all of the ingredients and then assembling them takes forever, which is why I wanted to rethink this dish.


I also made it into a Chicken Parmesan taste-alike. :)

Here are some of my best quick lasagne shortcuts:
  • I'm using oven-ready lasagne noodles so there's no pre-cooking needed. Just pile them up and they cook while in the oven.
  • Jarred sauce.
  • Instead of making the chicken from scratch, canned chicken is already cooked and ready to use.
Now I'm all set for a quick and delicious dinner!


Chicken Parmesan Lasagne
Serves: 8

Ingredients
  • 9 oz. box of oven-ready lasagne
  • 24 oz. Pasta Sauce

Chicken layer:
  • 2 (12.5 oz.) cans of chicken
  • 1/4 c. Italian Breadcrumbs
  • 1/4 c. parmesan
  • 2 eggs
  • 1 tsp. salt
  • 1/4 tsp. pepper

Cheese layer:
  • 1/2 c. parmesan
  • 3 c. ricotta
  • 4 cloves minced garlic
  • 2 eggs
  • 1 tsp. salt
  • 1/4 tsp. black pepper
  • 1 tsp. Italian seasoning
  • 1 tsp. dried basil

Topping:
  • 1/4 c. parmesan
  • 1/4 c. Italian breadcrumbs
  • 3 tsp. dried basil
  • mozzarella cheese (8 slices of fresh or shredded will work)


Directions:
1. Preheat oven to 400° F and line a sheet pan with aluminum foil.

2. Prepare your baking dish (either a very deep 8x10 or a 10x13) by spraying the sides lightly with oil.

3. In a medium bowl mix the Chicken layer ingredients.


4. In a large bowl, mix the Cheese layer ingredients.


5. In a small bowl, mix the parmesan, breadcrumbs, and 1 tsp. of the basil from the topping ingredients.


6. Pour about 1/3 of the jar of sauce in the bottom of your dish. Place a layer of lasagne over the sauce, overlapping them and pinching off the edges to fit the corners if necessary.



7. Spoon half of the cheese mixture over the pasta and spread to the edges. Cover with another layer of pasta.


8. Spoon all of the chicken mixture over the pasta and spread to the edges. Cover with another layer of pasta.


9. Spoon the remaining cheese mixture over the pasta and spread to the edges. Cover with another layer of pasta.


10. Pour the remaining sauce over the pasta and spread evenly to the edges.


11. Sprinkle the topping mixture over the sauce and cover with aluminum foil.


12. Bake for 45-50 minutes until hot and bubbly. 

13. Remove foil and top with mozzarella slices and sprinkle with the remaining basil. 


14. Broil for 4-5 minutes until the cheese is melted.
