Taco Roasted Chipotle Chicken Salad Wraps

I love a good, crunchy salad wrap for lunch, or even dinner, and this one is made even tastier with taco roasted chipotle sauce on freshly sautéed chicken. It can be a great make-ahead meal that is just assembled on a busy night and the leftovers are still amazing the next day for lunch. If you love salads, but wish they were easier to eat on the go, this is how to do it. :)


Salad wraps are a favorite go-to meal for us as you can really empty the fridge and use what you have on hand or go all out and shop for your favorite ingredients. The only constraint is that it has to fit in the wrap. ;)

This is a southwest-inspired wrap, so some good ideas for filling it (besides this tasty chicken) are:
  • shredded lettuce
  • spinach leaves
  • cooked corn
  • diced tomato
  • sliced avocado
  • diced red onion
  • green onion/chives
  • shredded carrot
  • bell pepper slices
  • shredded cheddar
  • jalapenos
  • banana peppers
  • corn chips (mmmm, crunchy.)
  • ranch
  • sour cream
  • salsa


The chicken is easier than you might think. I'm sautéing thinly-sliced chicken, then adding one of the new Simmer Sauces from Seeds of Change®, an organic seeds and food brand. I'm a fan of their Tikka Masala sauce (check out my Quickie Creamy Tomato Curry Meatballs), so I knew these new sauces would be good.


These sauces are made to inspire easy, tasty and healthy meals, and are created with only the finest Certified Organic ingredients. Seriously, look at the ingredients list next time you see them in the store!


The sauces come in a no mess, easy-to-pour 8 oz. pouch. Sauté your favorite meat, fish or tofu until done, add a Seeds of Change® Organic Sauce and simmer for 10 minutes. Done.



Taco Roasted Chipotle Chicken Salad Wraps

Ingredients:

  • 3-4 chicken breasts
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 2 Tbsp. olive oil
  • Seeds of Change® Taco Roasted Chipotle Simmer Sauce
  • diced green onions
  • Flour tortilla wraps
  • shredded iceberg lettuce
  • diced tomatoes
  • diced red onions
  • sliced avocado
  • ranch dressing

Directions:

1. Prepare your salad ingredients by shredding/dicing/slicing up your veggies.

2. Slice the chicken into thin strips and sprinkle on the salt and pepper. Sauté them in a skillet in the olive oil until cooked through, then add in the Taco Roasted Chipotle Simmer Sauce. Simmer until warmed through and sprinkle your finished chicken with diced green onion.

3. To assemble: Lay out a wrap and place a large handful of lettuce across 3/4 of the center. Top with the warm chicken and any other ingredients you'd like in your wrap, then drizzle with ranch dressing.


4. To wrap: Fold the "bottom" up over the filling. Over-fold one side around the ingredients in the center and using the wrap edge, pull and compress the ingredients back into the center (makes for neater eating.) Wrap the last edge around and you're done.

5. If taking this "to go", wrap in a piece or wax paper, parchment, or foil for an awesome, portable meal!


I hope you enjoy this wrap as much as I did! It's such a versatile way to pack in protein + lots and lots of delicious nutrition. With the other new sauces in Sesame Ginger Teriyaki, Sweet & Sour, Mushroom, and Tikka Masala, I'm going to have fun coming up with new wrap flavor combos!
