Summer is the perfect time for get-togethers and these easy-peasy (really!) lemon-squeezy (yum!) Icebox Cookie Sandwiches are perfect for a no-bake summer snack for a crowd or for a family treat. They're deliciously creamy and lemony + they're so easy, you'll want to make them over and over this summer.

Something about summer makes me crave lemony flavors. These cookie sandwiches are filled with a mixture of whipped cream and lemon curd for a creamy, dreamy lemon taste.


I'm usually a fan of the original NILLA Wafers, but I made these with Lemon NILLA Wafers so that the lemon flavor carries right through to the cookie, too, and it was absolutely delish.

NILLA Wafers and Lemon NILLA Wafers are both great for quick, no-bake treats. The possibilities are endless and they're the perfect little platform for delicious summer recipes. :)


They're not overpoweringly lemony, but a sweet little morsel of creamy lemony vanilla flavor. YUM.


I made these as a dessert for a cookout and they were gone in a flash! Even people who said they weren't crazy about lemon desserts loved them, so these are definitely going to be a favorite to bring to future get-togethers.


Plus, they're so easy to make, why not? No-bake recipes during the summer months are my favorite.


P.S.- They're delicious when paired with fresh, cold blueberries. :)


You can grab all of the ingredients at your local Walmart store. I'm using jarred lemon curd, but if you like to make your own, feel free! You'll need 1-1/4 cups of cold curd.

Easy-Peasy Lemon-Squeezy Icebox Cookie Sandwiches

Ingredients:
  • 1 box of Lemon NILLA Wafers
  • 10 oz. jar of lemon curd
  • 8 oz. tub of whipped topping

Supplies:
  • a gallon zipper bag + scissors + a rubber band OR a pastry bag with a large, round tip (use a star tip if you're feeling fancy!)
Directions:


  1. Place the whipped topping and the lemon curd in a bowl and mix well.
  2. Fill your pastry bag with the mixture OR put an open gallon zipper bag into a glass, corner first. Fill with the mixture, then twist the top and secure with a rubber band.
  3. Place the mixture bag in the freezer for 10 minutes to firm back up a bit. Remove, and if using a zipper bag, snip off the corner of the bag to pipe.
  4. Lay half of the cookies on a baking sheet, bottom-side-up.
  5. Pipe a dollop of the lemon mixture on each cookie.
  6. Top each one with another cookie, right-side-up.
  7. Keep refrigerated. These can be eaten right away, but I love them best the next day when the cookie has gotten a bit softer, like on an ice cream sandwich!
