Homemade Pimiento Cheese Spread {Recipe}
Friday, July 22, 2016I don't know if Pimiento cheese spread is a Southern thing, but I do know that I grew up with this stuff. It was a favorite of my mom and oldest brother, but it took me a while to like the taste. Once I did, though, I loved it!
It's made from shredded cheddar cheese mixed with diced, sweet Pimiento peppers and a few other things, and it makes a beautiful, creamy spread for sandwiches and crackers. If you've never had it, it's worth trying, and homemade is so much better than the store-bought versions.
I want to note that the recipe calls for a block of cheddar, shredded. It is important to shred the block yourself because pre-packaged shredded cheese contains additives to keep the cheese separated. You won't get the spread the right consistency if using pre-shredded cheese.
Homemade Pimiento Cheese Spread
Prep time: 8 minutes
Chill time: 2 hours
Makes: Approx. 2 cups
Instructions:
- 8 oz. block of Cheddar cheese, shredded
- 1 (2 oz.) jar of diced pimientos, with juice
- 1/2 c. mayonnaise
- 1 tsp. sugar
- 1 tsp. onion powder
- 1 tsp. Worcestershire sauce
- Shred an 8 oz. block of cheddar cheese in a medium bowl. (Do not use pre-shredded cheese as it contains additives to keep it from clumping.)
- Add all of the other ingredients to the bowl and mix with a fork.
- Then, using a hand mixer on high, beat the ingredients for approximately 2 minutes, scraping the sides down occasionally.
- Cover and chill for 2 hours. Stir before serving.
