Easy Roasted Red Pepper Hummus

Hi, guys! I'm back with a recipe for a delicious little dip/spread: Roasted Red Pepper Hummus! It's so easy to make and all of the ingredients can be purchased ahead of time to make this in a pinch. It's just a matter of dumping everything into a blender and voila! You have a delicious hummus that you can serve as a dip for just about anything or a flavorful spread for sandwiches and wraps. It's a great party or picnic food and can be ready in about 5 minutes!


I absolutely love hummus. If you haven't had it, the base is a paste made from pureed chickpeas. It's incredibly versatile when it comes to adding in flavors, and you can do versions like this spicy roasted red pepper and garlic version, my Zesty Garlic, Tomato & Basil Hummus, or go all out with the flavors of your favorite cuisine or food (like a pizza hummus or bean burrito hummus?!).


Hummus is generally considered a great vegetarian/vegan option to serve at a party, so this recipe is one to keep in mind if you entertain a lot. 


This version is very spicy, so if you want a milder version, start with just a sprinkle of cayenne pepper. You can always add more in, but you can't take it out!

Roasted Red Pepper Hummus

Ingredients:

  • 1 can of chickpeas (Garbanzo Beans)
  • 1 whole roasted red bell pepper (jarred)
  • 3-4 cloves garlic
  • 2 Tablespoons lemon juice
  • 1/4 cup Tahini
  • 1/2 teaspoon Cumin
  • 1/2 teaspoon Cayenne pepper (very spicy!)
  • 2 Tablespoons Olive Oil
  • 1 teaspoon of sea salt
  • pinch of black pepper


Directions:

1. Open and rinse the can of chickpeas before using.


2. I use jarred roasted bell peppers. Just pull out the equivalent of 1 whole bell pepper.


A note on Tahini: Should be stored in a cabinet (not the fridge), and may separate like natural peanut butter. Just give it a good stir before measuring out!


3. Add all ingredients to a blender and start on the lowest setting. You may need to add in a liquid to help it blend. You can add in extra olive oil, lemon juice, or water through the top.


4. Continue blending, going to the fastest setting, until it is very smooth-looking.


You're done! You can serve it right away or refrigerate it to thicken it up a bit. When you're ready to serve, drizzle it with olive oil.

Hummus is so easy to make and so versatile. You can really change up the taste and uses as you like. It can be served with cut veggies, chips, crackers, bread, pitas, or spread on sandwiches or wraps.


It's also easy to whip up last-minute as all of the ingredients can be bought ahead and kept in the pantry and fridge until needed.
