Hi, guys! Today I have the yummiest post for you. These easy cookies are made with chewy, hearty oatmeal, stuffed with nutty pecans and sweet, melty chocolate chips, and have been my absolute favorite cookies since childhood. They *may* have fueled my lifelong disappointment of biting into oatmeal cookies and tasting raisins. They certainly have become a cookie staple in our house, especially around the holidays. You may have seen the post about my Cowboy Cookie Mix gift, but it occurred to me that the math on making a big ole batch for yourself might be a little tricky.
Since I was gifting a boatload of treats last year I took these photos and planned to post about them. I found them again after the holidays and kicked myself. I've been saving this gem all year and wanted to get this out just in case you've been looking for a new cookie to try. I can wholeheartedly recommend this one.
These cookies aren't for those looking for a lighter treat. They are stuffed with a ton of butter, granulated sugar, and brown sugar. They are highly indulgent, but oh, so good. I would definitely recommend sticking with semi-sweet, or even dark chocolate chips. Thasalottasugar. Blame my grandma. 😂

Makes approx. 6 dozen (72) cookies
Ingredients:
- 1 c. all-purpose flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 c. butter, softened
- 1 c. granulated sugar
- 1 c. packed light brown sugar
- 2 eggs
- 1-1/2 tsp. vanilla
- 3 c. quick-cooking oats
- 1 c. semisweet chocolate chips
- 1 c. chopped pecans
Directions:
1. Preheat oven to 350°F.
2. In a medium bowl, sift together flour, baking soda, and salt.
3. In a large bowl, cream together butter, sugar, and brown sugar until light and fluffy. Add eggs, one at a time, then vanilla, beating well.
4. Add the flour mixture to the butter mixture slowly, mixing well.
5. Stir in oatmeal, pecans, and chocolate chips.
6. Drop by full teaspoonfuls (or use a cookie scoop) on a cookie sheet covered in parchment paper.
7. Bake for 8-10 minutes. Cool 10 minutes before transferring to a wire rack to cool completely.
