Tacos are such a versatile food and can be filled with any protein you like. These tacos are stuffed with marinated, grilled shrimp and topped with a fresh roasted tomatillo salsa. Once you've made the salsa (the recipe makes 2 pints and can be made ahead and frozen), it takes no time at all to marinate and grill the shrimp. This would make for a quick weeknight meal for the family or an impressive dish for a weekend cookout.

Years ago I had a dish like the above photo at a restaurant and fell in love! I could taste mayo, and sweetness, and some kind of chilis, but I couldn't figure out how to duplicate it. I searched the internet and found a million ratios of the same 3 or so ingredients, so this is mine. You can batter and fry, or bake the protein of your choice (we've had this sauce on shrimp and chicken), or you can buy pre-made battered shrimp or chicken for a quick weeknight meal. This sauce takes less than 5 minutes to whip up and it is amazing!
