I've been MIA for a couple of days because I just planned and cooked for another 2 weeks! I am still loving the Once A Month Meals Pro Membership and thought I'd share how it went this time vs. the first time when I, ah, looked before leaping...
The first time I cooked for 2 weeks, I skipped the prep step. It wasn't terrible because I was only cooking 12 meals, but it wasn't easy. This time, I prepped the meat and veggies the night before and it was so much easier on my big cooking day. A lot of the meals I only had to assemble. I know that if my family were a little less picky about repeating meals, it would have been easier still.
See, I am cooking for 6 (4 people, but with leftovers. Hopefully.) so I'm inputting 3 into the menu planner so my ingredients aren't doubled. If you don't mind eating the same thing again, it would really save you some time and money doubling ingredients and separating them out into 2 dishes. I can see why this is a thing that monthly meal planners do.
And again, I felt a huge sense of relief looking at all those finished meals. I feel like I'm ready for anything! Come accident or disaster (don't come, please) or a terribly long day, I don't have to worry about what I'm going to feed the kids.
So, I'm still loving the membership; I've even got a couple of friends starting freezer cooking! One thing I've heard of people doing is getting together and freezer cooking, sharing the costs, the work, and splitting the dishes. That sounds like a great excuse to hang out with your friends all day! I'm in.
