'Tis the season for everything pumpkin! I have been making pumpkin treats galore this season, and I got this idea for a Pumpkin Pie Milkshake as a way to use up my leftover pumpkin puree.
My family loves Pumpkin Pie and they love milkshakes, so why don't I put those together? I wanted it to have the taste of the crust as well, so what better cookie to top it with than crumbly, delicate, buttery Scottish Shortbread? If you like Pumpkin Pie, I guarantee you'll fall for this shake!
This takes less than 5 minutes to whip up, so you can enjoy the taste of Pumpkin Pie without all the baking!

- 3/4 cup pure Pumpkin puree
- 1/2 cup milk
- 1 tsp. Pumpkin Pie Spice
- 1 Tbsp. Maple Syrup
- 6 full scoops Vanilla Bean ice cream
- whipped cream
- (Optional) Shortbread cookies, chopped
Directions:
- Chop your shortbread cookies. You can use them as a stir-in or as a topping. They taste like a delicate, buttery crust!
- Add all ingredients except the shortbread and whipped cream into a blender and blend until smooth and creamy.
- If you want chunks of shortbread cookies throughout your shake, stir it in now.
- Pour into 2 tall glasses and garnish with whipped cream and more crumbled shortbread!
