Hi, guys! I don't know what the weather is like where you are, but here we're in the throes of full-blown Southern summer heat. I like to avoid heating up my kitchen for long periods, so today I've got a recipe for you to try that is made from start to finish in a slow cooker. It is a Mississippi Pot Roast.


It's a dish that has been making the rounds and only becomes more popular as time goes by. Not sure who first came up with this, but with a few simple ingredients, you can make an unusual but absolutely delicious beef roast right in your crockpot!


Slow Cooker Mississippi Pot Roast

Prep Time: 5 minutes
Cook Time: 8 hours
Servings: 4-8 depending on size of roast

Ingredients:

  • Whole chuck roast
  • 1/2 cup water
  • 1 packet ranch seasoning
  • 1 packet au jus
  • 1/2 c. (1 stick) of salted butter
  • 1/2 of a 16 oz. jar of pickled pepperoncini

Directions:
  1. Spray the slow cooker insert with nonstick cooking spray.
  2. Add the chuck roast, fat side up.
  3. Add water.
  4. Sprinkle the ranch and au jus packets on top.

  5. Place the butter stick on top of the seasoned chuck roast.
  6. Add as many pepperoncini to the pot as you'd like.

  7. Cook on low for 8 hours.
  8. Serve with loaded baked potatoes, roasted carrots, or your favorite side!
