A Lean Cuisine Stock-Up + Parmesan Feta Spinach Puffs Recipe

When I get super-busy and am slugging down coffee all day, it's hard to remember to stop for lunch sometimes. I have to admit that when I do remember and there's nothing to grab and go, I'll wait until dinner when I'll be cooking anyway. Not a great choice, I know. That's why I love to stock up on easy, better-for-you frozen meals (on sale!) that I can just pop into the microwave and healthier side recipes that I can make ahead and warm up for the perfect lunch pairing.


I paired the new LEAN CUISINE® Marketplace Spicy Penne Arrabiata with my Parmesan Feta Spinach Puffs recipe to get in some dark, leafy greens and it was a match made in heaven!


These spinach puffs are packed with fresh spinach, onions, garlic, feta cheese, and parmesan cheese to stuff in lots of flavor in a small bite.


They pair perfectly with just about any pasta.


This particular pasta is the new Spicy Penne Arrabiata from Lean Cuisine and it packs a flavor punch of its own. If you like it spicy, this is the dish for you.

So, fill your freezer and prepare a batch of these delicious spinach puffs to go with them. Just mix, roll, bake, and store for a flavorful side whenever you like.


Parmesan Feta Spinach Puffs

Makes: approximately 3 dozen puffs
Prep time: 10 minutes
Cook time: 25 minutes

Ingredients:

  • 16 oz. bag of fresh spinach, chopped
  • 6 slices wheat bread, cubed
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 3 large eggs
  • 3 Tbsp. olive oil
  • 1-4 oz. pkg. crumbled feta cheese
  • 1/2 c. Parmesan cheese
  • 1/4 tsp. Rosemary
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

Directions:

1. Preheat oven to 400° F and line a baking sheet with parchment paper.
2. Combine all ingredients in a large bowl.


3. Using your hands, mix until combined and spinach is bruised and sticky.



4. Squeeze and roll a heaping Tablespoon-sized portion into a 1-1/2" ball and place on the baking sheet.


5. Bake on middle rack for 20-25 minutes until browned on top.


You can eat these fresh out of the oven or let them cool completely before storing them in an air-tight container in the fridge, ready for your week's lunches.


Just heat them for around 60 seconds in the microwave for a dose of delicious spinach with your meal.


These will pair perfectly with so many of the new Marketplace meals and are much more exciting than a salad.
