When I get super-busy and am slugging down coffee all day, it's hard to remember to stop for lunch sometimes. I have to admit that when I do remember and there's nothing to grab and go, I'll wait until dinner when I'll be cooking anyway. Not a great choice, I know. That's why I love to stock up on easy, better-for-you frozen meals (on sale!) that I can just pop into the microwave and healthier side recipes that I can make ahead and warm up for the perfect lunch pairing.

I paired the new LEAN CUISINE® Marketplace Spicy Penne Arrabiata with my Parmesan Feta Spinach Puffs recipe to get in some dark, leafy greens and it was a match made in heaven!

These spinach puffs are packed with fresh spinach, onions, garlic, feta cheese, and parmesan cheese to stuff in lots of flavor in a small bite.

They pair perfectly with just about any pasta.

This particular pasta is the new Spicy Penne Arrabiata from Lean Cuisine and it packs a flavor punch of its own. If you like it spicy, this is the dish for you.

Besides being delicious, Lean Cuisine meals are also non-GMO, gluten-free, high in protein, and with organic ingredient options, so they're a good option for easy-to-eat meals at work, or a better choice for quick, protein packed meals made at home for lunch.

You can feel good about grabbing a quick lunch whether you require extra protein in your diet, gluten-free options, or organic options. I need extra protein in my life and quicker is better, so they're perfect for my busy lifestyle.

Some of the other meals available include Vermont White Cheddar Mac & Cheese, Sesame Chicken, Butternut Squash Ravioli, and Spinach Artichoke Ravioli. Find out about other delish flavors here. There are so many delicious-sounding meals that you'll have a hard time choosing. IF you had to choose.

They are available on sale for $1.99 (normally $3.00) at Target through the month of January (1/1/17 - 1/31/17), so you won't have to choose. You can grab all of the new meals at an awesome discount, hence my stock up. I'm not going to miss out on such a great sale!

And there will be no more excuses to miss lunch with fast, better-for-you food ready to heat up in the freezer.

So, fill your freezer and prepare a batch of these delicious spinach puffs to go with them. Just mix, roll, bake, and store for a flavorful side whenever you like.

Check out this video for the recipe directions or follow the steps below!

1. Preheat oven to 400° F and line a baking sheet with parchment paper.
2. Combine all ingredients in a large bowl.

3. Using your hands, mix until combined and spinach is bruised and sticky.

4. Squeeze and roll a heaping Tablespoon-sized portion into a 1-1/2" ball and place on the baking sheet.

5. Bake on middle rack for 20-25 minutes until browned on top.

You can eat these fresh out of the oven or let them cool completely before storing them in an air-tight container in the fridge, ready for your week's lunches.
