These spinach puffs are packed with fresh spinach, onions, garlic, feta cheese, and parmesan cheese to stuff in lots of flavor in a small bite.
They pair perfectly with just about any pasta.

Parmesan Feta Spinach Puffs
Prep time: 10 minutes
Cook time: 25 minutes
Ingredients:
- 16 oz. bag of fresh spinach, chopped
- 6 slices wheat bread, cubed
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 3 large eggs
- 3 Tbsp. olive oil
- 1-4 oz. pkg. crumbled feta cheese
- 1/2 c. Parmesan cheese
- 1/4 tsp. Rosemary
- 1/2 tsp. salt
- 1/2 tsp. pepper

- 16 oz. bag of fresh spinach, chopped

How to cook Parmesan Feta Spinach Puffs
- Preheat oven to 400° F and line a baking sheet with parchment paper.
- Combine all ingredients in a large bowl.
- Using your hands, mix until combined and spinach is bruised and sticky.
- Squeeze and roll a heaping Tablespoon-sized portion into a 1-1/2" ball and place on the baking sheet.
- Bake on middle rack for 20-25 minutes until browned on top.
NOTES:
You can eat these fresh out of the oven or let them cool completely before storing them in an air-tight container in the fridge, ready for your week's lunches.
