Our Family-Favorite Tuna Salad Recipe
Friday, June 29, 2018
It has been in the 90's all week here and I don't know about you but I'll do anything I can not to heat up the kitchen any more than I have to and this Tuna Salad is the perfect way to have quick, cold sandwiches for lunch or dinner. Also, they're perfect for picnics!
I worked on this recipe for years and finally found the perfect mix of tart and sweet, creamy and crunchy that my family absolutely loves. This tuna salad is made with hard-boiled eggs, diced sweet pickles (trust me), mayo, and lots of lemon juice, but there's one secret ingredient that takes it from bland to flavorful in a snap.
I'll cut to the chase and reveal that my secret ingredient is a splash of the sweet pickle vinegar. It adds some sweetness, but also a whole lot of flavor. If you'd like to cut down on the sweetness, you can sub in a splash of white vinegar or some of your favorite salad vinegar. It really is a "must" for bland tuna salad.
I'm using my grandpa's cheater sweet pickle recipe (you can find it here) but if you don't want to wait 2 weeks for them to be ready (although it is worth it), you can use your favorite store-bought sweet pickles.
Tuna salad is such a versatile spread as you can use it on sandwiches, as a cracker topper, or as a dip with hearty, crunchy tortilla chips. You can make it a complete healthy lunch by adding in some raw veggies and dip, which is our favorite. :)
