Sweet & Savory Roasted Chicken Salad {Recipe}
Friday, June 12, 2015Perfect for a quick dinner, to take along to a picnic, or serve at a cookout, this chicken salad has a sweet, nutty taste that everyone will love. Serve over a salad, in sandwiches, or on the side, and see why this will always be my go-to chicken salad recipe!
Note: If you've never handled a whole chicken, I'll walk you through taking it apart. Also, this recipe can easily be doubled.

Ingredients:
- 1 2-lb. Pre-roasted chicken from your grocer's deli
- 1 cup of seedless, sweet purple or red grapes, halved
- 1/2 c.. chopped pecans
- 1/2 c. mayonnaise
- salt & pepper to taste
- Remove both the dark and light meat from your roasted chicken. If you've never handled a whole chicken, it couldn't be easier. Follow the steps below to separate your chicken into pieces, then remove the meat and place in a large bowl.
- Add all of the remaining ingredients into your bowl of chicken meat and mix well. Add salt and pepper to taste.
- And you're done! Easy-peasy! If you like your chicken salad a bit creamier add more mayo, if you'd like it sweeter add more grapes, and if you'd like it crunchier add more pecans. You can add or remove ingredients to suit your own tastes and make this your own go-to chicken salad recipe! Enjoy!
