Watermelon is king during the summer months, and today I have a refreshing drink recipe for your long, hot summer days: a Blueberry Watermelon Lemonade!


This drink is more like a juice smoothie as it contains pureed blueberries and watermelon, and it is naturally sweet, so little additional sugar is required. The watermelon takes center stage, but if you'd like more of a lemonade taste, add 2 more lemons to the recipe.

You can easily make an individual drink into a cocktail by adding 1-2 oz. of your favorite vodka or rum to each glass and stir, or you can make the entire pitcher into cocktails by adding 8-12 oz. of alcohol.



Blueberry Watermelon Lemonade

Makes: approx. 1 gallon

Ingredients:
  • 12 c. water, divided
  • 4 medium to large lemons
  • 34 c. sugar (or sweetener of choice)
  • 3 c. seedless watermelon, cut into chunks
  • 1 c. blueberries

Directions:
  1. Start by juicing your lemons. 4 lemons should provide about 8 Tbsp. of juice.


  2. In a large pitcher, combine 4 cups of the water, lemon juice, and sugar. Stir well until sugar is dissolved.
  3. Cut your watermelon into slices, cut off the rind, and dice into chunks.


  4. Add watermelon, blueberries and the remaining 2 12 cups of water to a blender and blend on high until smooth.


  5. Add the watermelon mix to the lemonade mix and stir well.


  6. Serve over ice, with rimming sugar if desired.
