With the New Year coming, it's time for me to start thinking about eating better. Gone are the many holiday meals, the rich dishes, the dense cakes, cookies for miles, and the chocolate. Oh, the chocolate. If you need to get back on track too, I have the perfect recipe for you. This is one of my favorite lunches and it's so delicious, you won't even miss that fruitcake. These Grilled Chicken & Avocado Melts are made from better-for-you (but incredibly flavorful) ingredients, toasted, piled up, and melted together. Just add a piece of fruit for a totally balanced meal!

With holiday entertaining still in full swing, I've got a delicious, crowd-pleasing recipe for you. Everyone loves sliders, but these have a twist. They're modeled on the Po' Boy sandwich using delicious Alaska Cod breaded in a Creole-spiced batter, served on a crusty, rustic slider bun, and piled on a platter with all of the fixins so your guests can dress them how they like. I've also included the recipe for a homemade Remoulade sauce for that authentic Po' Boy flavor.
