This recipe for a sweet and creamy Cole Slaw is about as Southern as it gets. It's excellent as a side for pork, brisket, smoked sausage-dogs, chicken, burgers, and sandwiches, or right on top of a pulled-pork BBQ sandwich, Memphis-style. It tastes very similar to the slaw of a certain three-letter chicken place, but I like my version so much better because I know exactly what's in it. ;)


It takes only about 15 minutes to prepare, but it needs to sit overnight in the fridge to marinate.



Creamy, Sweet, Southern Cole Slaw

Ingredients:

For Slaw:
  • 1/2 head of large cabbage, thinly shredded, then chopped
  • 1 medium carrot, shredded
    OR
  • 1 16oz. bag of prepped cole slaw cabbage mix

For Sauce:
  • 3 Tbsp. red onion, minced finely (onion-chopping hack)
  • 1/2 cup mayo
  • 1/2 cup buttermilk
  • 1-1/2 Tbsp. white vinegar
  • 2 Tbsp. lemon juice
  • 1/3 cup sugar
  • 1/2 tsp. celery salt
  • 1/4 tsp. pepper

Directions:
  1. If using a cabbage head, shred thinly on a mandolin slicer, then chop the shredded cabbage roughly with a large knife. If using bagged, shredded cabbage and carrots, chop the mix roughly until all large pieces are no larger than the size of a quarter. This makes the finished product much easier to eat as well as helps the sauce soak in.

  2. Whisk together all remaining ingredients in a large bowl until well combined.

  3. Add in cabbage and carrots and stir to coat.

  4. Cover in plastic wrap and put in refrigerator overnight.
  5. Stir well and enjoy!
