Alright y'all. Another Friday, another pizza. This one has no redeeming veggies. There is no pretense at "healthy". This pizza laughs while it attaches itself firmly to your backside. Pure evil. Pure, delicious evil...


It is a melty, cheesy, BBQ Chicken & crusty chopped Bacon pizza with the addition of sweetness from pineapple slices and spice from peppers. We like spicy, crunchy, banana peppers, but Jalapenos or Pepperocinis would be wonderful too!

Spicy Hawaiian BBQ Bacon & Chicken Pizza

Cook time: 20 minutes
Total time: 50 minutes

Ingredients:
  • 1 large store-bought crust or 1/2 of this Homemede Pizza Dough recipe
  • 2 Tbsp. Extra Virgin Olive Oil 
  • 1/2 cup of your favorite BBQ sauce (I like Corky's) 
  • 2 chicken breasts, cooked and diced (can buy already cooked at the Deli) 
  • 1/4 Red Onion, sliced thin 
  • 2 cups of Mozzarella cheese, shredded 
  • 6 pineapple slices, drained and squeezed slightly between layers of paper towels 
  • jar of spicy Banana Peppers (they usually come sweet, or substitute Jalapenos or Pepperocinis) 
  • 1/2 cup of Bacon, cooked not-quite-crisp and chopped (can buy already cooked) 
  • 1/4 cup Parmesan cheese 

Directions:
  1. Preheat oven to 450 degrees if using homemade pizza dough. If using a pre-made crust, follow the maker's directions.
  2. Line your pizza pan with parchment paper and drizzle with olive oil.
  3. Stretch your dough out over your pan and roll the edges in to form the crust.
  4. Brush the 2 Tablespoons of Extra Virgin Olive Oil over the crust edges.
  5. Pour the BBQ sauce in the middle of the dough and spread evenly with the back of a spoon.

  6. Layer on half of the red onion and chicken.
  7. Cover with all of the Mozzarella.
  8. Layer on the remaining red onions, chicken, peppers, pineapple rings, and top all with your chopped bacon.

  9. I have to make the crust tasty or the youngest won't eat it, so sprinkle your Parmesan over the whole pizza, concentrating about half on the crust.
