Cranberry, Pecan, & Brown Sugar-Topped Sweet Potatoes

First off, the number of casseroles at our Thanksgiving dinners were getting ridiculous. It's one thing if you're hosting a big gathering, but what if it's just the immediate family? These sweet potatoes are a great way to make your more intimate dinners easier. It can also be spooned over a turkey sandwich. Yum!
The sauce takes about 15 minutes to make (10 of those are just simmering), and it can be made ahead of time and reheated before serving. I'm a big fan of the original Coca-Cola® (when I want a "soda", that's what I want), so I was surprised that I loved the Coca-Cola® Cinnamon as much as I did. It's the taste of the awesome original with just a hint of cinnamon.
The Sprite® Winter Spiced Cranberry is the same Sprite® you know and love, but with a hint of dreamy spiced cranberry. π
They're a great way to get a taste of the season anytime, but an especially great addition to a holiday get-together. They would also make an excellent adult beverage ingredient for the holidays.

It is so good, everybody loved it, even hubby who isn't crazy about nuts in his food and daughter who isn't crazy about sweet potatoes. (I mean, who doesn't like sweet potatoes?!?! Totally another topic.)

Cranberry Pecan-Topped Sweet Potatoes

Serves: 4
Ingredients:
- 1 (14oz.) can of Whole Berry Cranberry Sauce
- 1/4 c. brown sugar
- 1/4 c. (1/2 stick) salted butter
- 2 Tbsp. water
- 1/2 c. chopped pecans
Directions:
1. Add all ingredients into a medium saucepan and bring to a boil.
2. Turn the heat down to low and simmer for 10 minutes.
3. Remove from heat and allow to cool slightly before placing in a serving dish. The sauce will thicken more as it cools.
It can be made ahead of time and refrigerated in an airtight container for up to a week. When ready to serve, heat up on the stove or in the microwave until hot.
You can cook sweet potatoes in lots of ways, but my favorite is baking them in an oven. It helps to caramelize the sugars in the potato and gives it a depth of flavor you won't get in the microwave.
To bake the potatoes: Just scrub your potatoes and poke a few holes in them with a fork or knife, place them in a roasting pan, drizzle them with olive oil, cover with foil, and bake in a 400°F oven for 60 minutes. Poke them with a knife or fork to check for doneness. When it slides in easily with no resistance, they're done!
To prepare the potatoes: Slice it open down the middle and push in at both ends to help open up the potato. Use a fork to mash and fluff the "meat" of the potato and make a little well in the center. You can place the cranberry mixture in a bowl on the table and allow everyone to help themselves or prepare each potato in advance.
